Broadspectrum are currently seeking an experianced Chefs for their Defence Base Services Contract in Darwin, Northern Territory. We currently have causal and full time positions available for the right candidates. 

 

RESPONSIBILITIES

  • Support and participate in the implementation and management Broadspectrum’s Food Safety Program. This involves actively identifying hazards, employing appropriate controls, recording incidents in line with Company standards, and ensuring team members receive the appropriate training and instruction.
  • Preventive management of food safety hazards through the systematic application of HACCP controls. 
  • Manage the overall preparation and delivery of meal services from production facilities, ensuring regular consultation with the Food and Beverage Coordinator and Mess Committee regarding expectations and performance.
  • Operate large-volume cooking equipment such as grills, deep-fat fryers, and barbeques.
  • Overall stock management, including ordering of supplies, stock rotation, application of labels and dates, correct storage and handling, develop inventory control measures, ensure correct wastage practices, and coordinate stock takes.
  • Train all food production personnel in Broadspectrum’s procedures and methods relating to food preparation and presentation, including those specific to religious meal service, such as Kosher and Halal.
  • Build strong working relationships with performance and compliance team, ensuring efficient management of Health, Safety and the Environment (HSE), Food Safety and HACCP, and Contract compliance
  • Ensure all areas of the kitchen are clean, sanitised, well-maintained and presentable.

  • Check, record and sign off on all shift cleaning schedules, and documentation relating to incoming goods, food holding units and temperature probes.
  • Prepare reports as requested by Line Manager and/or Mess Committee.
  • Undertake any other reasonable duties as requested by the Food & Beverage Manager.
  • Actively participate in the Performance Development Review process, ensuring alignment to the performance pillars - Perform, Grow, Develop & Innovate

RISK, HEALTH, SAFETY, QUALITY & ENVIRONMENT

  • Driving excellent Risk and HSEQ performance within the Contract/Business Unit
  • Comply with Broadspectrum Risk Management, Quality Assurance and Health, Safety and Environment management systems, including statutory obligations.
  • Consistently deliver excellent Risk and HSEQ results
  • Drives for zero harm and relentlessly pursues safety 

 

POSITION REQUIREMENTS

  • Australian recognised Commercial Cookery qualification. 
  • HACCP Level 3 certification.
  • Minimum of 3 years’ experience managing large commercial kitchens.
  • Solid understanding of contract management, quality management systems and continuous improvement principles.
  • Sound knowledge of Food Safety Standards, relevant legislation and statutory obligations.
  • Knowledge or understanding of Defence Force operations, systems and functions desirable. 
  • Enthusiasm and commitment to high standards of customer service.
  • Strong planning and organisation skills and proven experience in collaborative and consultative processes at a professional level. 
  • Demonstrated interpersonal communication skills and the ability to work as a member of a team. 
  • Excellent verbal and written communication skills.
  • Computer literate – sound working knowledge of Microsoft Office Suite.


SPECIAL CONDITIONS

  • Must be an Australian Citizen, in order to obtain a Department of Defence Security Clearance
  • This position requires a Australian Federal Police Check
  • Travel may be required on occasion between Defence Bases
